Arusha Coffee Lodge, part of the Elewana Collection, is seeking a creative and experienced Executive Chef to join our dynamic team. This is a unique opportunity to lead the transformation of our culinary offerings into a landmark experience in Tanzania’s Northern Safari Circuit. At the heart of this transformation is our new Market Garden Theme Restaurant, designed to set new benchmarks in culinary excellence, rivaling the standards of globally renowned theme parks.

Key Responsibilities
- Food Production Leadership: Oversee and manage all food production operations within the lodge.
- Culinary Innovation: Spearhead all culinary activities, ensuring creativity and excellence in every dish.
- Concept Development: Lead the development and execution of new dining concepts, including a 400-guest capacity Outdoor Garden Theme Restaurant designed to offer a world-class, authentic African dining experience.
- Multi-functional Culinary Oversight: Manage various food and beverage outlets, including a fine dining restaurant, bistro bar, coffee shop, in-room dining, safari picnics, and large-scale garden dining.
- Menu Planning & Budgeting: Develop innovative menus, oversee purchasing, and manage culinary budgets effectively.
- Operational Efficiency: Run efficient kitchens with a focus on profitability, stock management, and waste control, while maintaining top-tier hygiene standards.
- Staff Training & Development: Train and mentor local culinary staff, fostering growth and skill development.
- Product Standards: Maintain adherence to Elewana’s high culinary standards and development plans.
- Compliance & Auditing: Ensure compliance with food standards, hygiene protocols, procurement audits, and Elewana policies.
- Financial Management: Achieve food revenue targets, control costs, and operate within set budgets.
- Guest Satisfaction: Consistently deliver exceptional dining experiences to maintain guest satisfaction.
- Market Awareness: Stay ahead of culinary trends and adapt menus to meet evolving guest preferences.
- Team Leadership: Manage staffing levels, conduct appraisals, and oversee team performance.
- Reporting & Committees: Submit timely and accurate reports and actively participate in committees as required.
Qualifications
- Extensive experience as an Executive Chef or in a similar leadership role within high-end hospitality.
- Culinary degree or equivalent certification.
- Strong leadership, team management, and communication skills.
- Proven creativity in menu development and presentation.
- Comprehensive knowledge of culinary trends and local ingredients.
- Commitment to excellence in food quality and service.
- Familiarity with compliance standards for health and safety regulations.
- Knowledge of Elewana policies and standards (or readiness to learn).
- Demonstrated ability to meet financial targets and control operational costs.
