With operations spanning Arusha, Meatu-Simiyu, and Mara regions, Mwiba is committed to excellence and innovation in hospitality.
Position Overview:
The Chef Trainer will lead the training initiatives within our food and beverage department. This pivotal role involves elevating our culinary standards by coaching our chefs to master the company’s unique cuisine approach, while introducing international culinary trends and menu options across our camps and lodges.
Key Responsibilities:
- Provide comprehensive training to kitchen staff on operational procedures, emphasizing hygiene, safety, and stock management.
- Develop and implement dietary-specific menus (vegan, vegetarian, lactose-free, gluten-free) tailored to the preferences of international guests.
- Train team members in stock control practices, including FIFO (First In, First Out) methodology, to minimize wastage.
- Create and introduce innovative dishes, ensuring each camp and lodge maintains a distinct culinary identity.
- Design modern, light menus, moving beyond traditional safari-style offerings.
- Oversee the maintenance and enhancement of onsite herb gardens, introducing new plant varieties as needed.
- Regularly review and revamp existing menus to align with evolving guest preferences.
- Conduct health and safety training in accordance with TFDA (Tanzanian Food and Drug Administration) standards.
- Implement food cost calculations, fostering efficiency and cost-effectiveness while maintaining quality.
- Establish and enforce SOPs (Standard Operating Procedures) for consistent service, including bush meals, picnics, and specialty setups.
- Streamline kitchen workflows and staff roles to maximize efficiency and productivity.
- Lead initiatives for special guest experiences, seasonal promotions, and innovative projects such as greenhouse development.
- Ensure all kitchen equipment is serviced and functional, minimizing operational disruptions.
- Manage the supply chain for culinary ingredients and materials, ensuring optimal storage and inventory control.
- Inspire and mentor aspiring chefs, fostering creativity and professional growth within the team.
Qualifications & Experience:
- Diploma or Degree in Culinary Arts or equivalent hands-on experience.
- A minimum of 5 years in a professional kitchen, with at least 3 years in a leadership or training capacity.
- Certification in food safety and hygiene (preferably TFDA) is an advantage.
- Expertise in culinary techniques, food preparation, and modern presentation styles.
- Proven ability to design and adapt menus, including specialized dietary options.
- Exceptional organizational skills in inventory management, stock control, and ordering processes.
- Strong communication skills with a focus on collaboration and team development.
